A new inulin product with reduced hygroscopicity and better water solubility and / or miscibility in water at room temperature, characterized in that it comprises at least two different polysaccharides, each with a different molecular weight in the range from 340 to 2288 , wherein said inulin product contains less than 0.75% by weight of monosaccharides and less than 25% by weight of polysaccharides with molecular weights greater than 2288.
