PURPOSE: A method for manufacturing noodles by mixing the carapace of snow crabs, which has hitherto been discarded, with wheat flour and extruding is provided. The manufactured noodles contain nutrition such as protein, chitosan or the like, which wheat flour is lack of . CONSTITUTION: About 70 to 90% by weight of snow crabs, whose gills and claws are eliminated, as a main ingredient, are mixed with 10 to 30% by weight of side ingredients and ground. Then, 5 to 10% by weight of the mixed powder is mixed with 90 to 95% by weight of wheat flour, kneaded and extruded using a roller to give noodles. The noodles are steamed, fried in oil and cooled. The side ingredients include 5 to 15% by weight of ginger and 5 to 15% by weight of garlic.
