PURPOSE: A method for drying unripe green hot peppers and powder of dried unripe green hot pepper thereby are provided, therefore the powder can maintain a distinct green color of the hot green peppers and can be used as food additives. CONSTITUTION: Dried unripe green hot peppers powder is manufactured by the steps of: cutting unripe green hot peppers into two or more pieces; drying the cut pieces at 60 deg. C or less, preferably 50 to 60 deg. C using hot wind for 12 hours; and pulverizing them using a pulverizer.
