SUBSTANCE: the present innovation deals with extracting bitter substances with nonpolar liquefied gas, treating with liquefied gas at pressure being above atmospheric one and decrease of pressure up to atmospheric one at rate to provide fruits' freezing. Before treatment, fruits should be treated with preparation obtained due to successive extraction of Mortierella beljakovae micromycete biomass with nonpolar extragent in supercritical state with water, alkali, water, acid, water, alkali and water followed by combining solid residue with the first extract at the quantity of 0,5-1.104 mg/t to be kept for 2-5 h. Moreover, one should apply ammonia gas for treatment. The suggested innovation enables to increase the quality of end product. EFFECT: higher efficiency.
