PROBLEM TO BE SOLVED: To solve problems that the adductor muscle is readily damaged and the quality and grade thereof are easily lowered in a conventional method for taking out the adductor muscle.;SOLUTION: This method for treating a shellfish comprises jetting a liquid from the outside of an adductor muscle (an unstriated muscle part) of the shellfish into the inside of valves of the shellfish and separating the valves and flesh (including the adductor muscle) so as to open the valves. After opening one of valves, the accessory parts of the shellfish are individually sucked and removed or two or more kinds or the whole is collectively sucked and removed. Openings are formed in a part of the valves of the shellfish to suck and remove the accessory parts of the shellfish individually or two or more kinds thereof or the whole collectively. After sucking and removing the accessory parts, the liquid is jetted on the shellfish to separate the other valve and flesh. The openings are formed in a part of the valves by excising the part of the valves with cutting knives or perforating the valves or pressurizing and breaking the valves. The apparatus for treating the shellfish is equipped with a mechanism for removing the accessory parts, a transporting unit, an opening mechanism and a first and a second separating mechanisms (nozzles) so as to realize the methods for treatment and the nozzles are installed on the outside of the adductor muscle (the unstriated muscle part) of the shellfish.;COPYRIGHT: (C)2002,JPO
