PROBLEM TO BE SOLVED: To provide a novel enzyme that specifically hydrolyzes the branching chains in branched oligosaccharides without action on cyclic oligosaccharides. ;SOLUTION: This novel enzyme is α-1,3-multi-branched dextran hydrolysis enzyme having following physical and chemical properties: 1. Action: It acts on multi-branched dextran having the α-1,3 bond branches to form glucose; the optimal pH is near 7.0 and the stable pH range is 5.5-8.0; 2. Substrate specificity: When a gluco-disaccharide is used as a substrate, it well acts on them in the order of α-1,2α-1,4α-1,3α-1,6 and acts at best on dextran, next α-1,3-multi-branched dextran and scarcely acts on mutan of α-1,3-glucan; 3. Inhibition and activation: This enzyme is inhibited more than 90% with Hg2+, Cu2+, Ni2+, Fe2+ and the like and activated by 30% with Ca2+; the optimal temperature is 45°C. The heat treatment at 45°C for 15 minutes deactivates the enzyme by 30%, while 50°C for 15 minutes completely deactivate it; 4.
