PURPOSE: A control method of a refrigerator is provided to ferment kimchi efficiently, and to improve flavor of food by adjusting the initial ripening temperature properly corresponding to the initial temperature of food in preserving food in the refrigerator. CONSTITUTION: A compressor, a valve and a heater are turned off to stop cooling function in selecting the aging mode by a user(302,304), and the initial temperature of kimchi is measured(306). The first aging mode is operated at the desired temperature of 1 deg.C in case of the measured temperature to be lower than the predetermined temperature(310). The second aging mode is performed at the temperature of 7 deg.C(312), and the third aging mode is operated at the temperature of -1 deg.C(314). The initial measured temperature of kimchi is compared with the predetermined temperature(308), and the first aging mode is operated by maximizing cooling function in case of temperature of kimchi to be over the predetermined temperature(316).
