PURPOSE: A method of packaging meat in vacuum by packaging meat with bamboo leaf slices or bamboo leaf powder prior to a vacuum packaging of meat is provided. It reduces product spoilage and provides characteristic flavor of bamboo leaves to the meat product during aging, thereby improving the taste and quality of products. CONSTITUTION: During the packaging of meat, bamboo leaf slices or bamboo leaf powders are added to meat prior to a vacuum packaging of meat. The bamboo contains Sasa borealis(Hack.) Makino and Phyllostachys reticulata (Rupr.) K. The meat contains beef, pork, chicken, duck, goat, lamb, horse, deer and freshwater eels.
