The baking accessory consists of a solid but supple ring (10) of a food grade material that can be placed inside a pastry flan case mould ring (2) on a baking sheet (1) to hold the wall (5.2) of the pastry case upright while it is being baked. It can be used in conjunction with a perforated disc (21) that is placed on the pastry base (5.1), and it can have a vertical or sloping outer surface, according to the shape of the mould ring.
