PROBLEM TO BE SOLVED: To provide a method for processing wheat flour improved in flavor and palate feeling without losing secondary processing suitability: to provide processed wheat flour obtained by the method: and to provide food using the processed wheat flour.;SOLUTION: The method for processing wheat flour comprises homogeneously dispersing 10-55 pts. wt. of ethyl alcohol to 100 pts. wt. of wheat flour under such a condition that the entire moisture gets to ≤20 wt.%, and volatilizing the ethyl alcohol from the mixture at ≤50°C.;COPYRIGHT: (C)2006,JPO&NCIPI
