The invention refers to the wine industry, in particular to a process for producing natural white or rose wines from grapes with a reduced content of sugar.The process, according to the invention, includes crushing and stemming of the grapes, separation of the must, sulphitation and clarification thereof, rapid cooling of the clarified must at the temperature from -8 up to - 12°C with cold ageing in isothermal conditions of 4…12 hours, separation of the formed ice and subsequent fermentation of the must.The result consists in obtaining high-quality wines from grapes with a reduced content of sugar.
