The nitrate ion concentration and so forth in a fresh leaf of a vegetable such as spinach or lettuce can be nondestructively directly measured by near-infrared spectroscopy. A vegetable or the like of an object to be examined is irradiated with a light of a wavelength in the range from 400 to 2500 nm or in a part of the range. The reflected, transmitted, or transmitted and reflected light is detected to acquire absorbance spectrum data. The absorbance over the whole measurement wavelength range or at a specific wavelength is substituted in a previously made measurement model to quantitatively or qualitatively analyze the component contained in the vegetable or the like.
