The invention relates to a start-up method for a milk sterilisation plant and milk sterilisation plant embodied to carry out the start-up method. The milk sterilisation plant comprises a separator (5) and a subsequent pasteurising unit (34), with a branch valve (15), between the separator (5) and the pasteurising unit (34), embodied, after a flushing of the separator (5) and the pasteurising unit (34) with a liquid flow of flushing water, to run off the milk (1), introduced into the milk sterilisation plant before the separator (5) to replace the flushing water, into a microfiltration unit (14) and a milk inlet (22), arranged after the branch valve (15) and before the pasteurising unit (34), embodied to introduce microfiltered milk from the microfiltration unit (14) into the milk sterilisation plant, by opening at least one permeation valve (40). A replacement fluid introduction valve (50) and a control module (54) are provided, whereby the control module (54) is embodied to control the branch valve (15) and the replacement fluid introduction valve (50) such that, at the same time as the withdrawal of the milk into the microfiltration unit (14), an introduction of the replacement fluid, preferably water, is carried out between the branch valve (15) and the pasteurising unit (34) in the milk sterilisation plant by means of the replacement fluid introduction valve (50), such that the liquid flow through the pasteurising unit (34) may be maintained. The introduction of the replacement fluid with the introduction of the microfiltered milk onto the milk sterilisation plant at the milk inlet (22) may be ended by closure of the replacement fluid introduction valve (50).
