A rotary fermenter for vinification that comprises (see fig.1): a container substantially cylindrical (1)shaped with horizontal axis revolving on rotary support (4) activated by an engine (5) one or more opening (6) for loading the material-a inner shovel (14) eccentrically positioned in respect to the rotation axis of the fermenter and capable to rotate using a pushing mechanism (15). A tilted inner draining floor (11) for the passage of the liquid part of the fermenting product- a screw conveyor (12) to unload the solid part of the material after fermentation, an engine (13) provide to activate the conveyor-a valve (9) to close the out of the screw conveyor-an hole with a valve (10) for unload the liquid part of the fermented material collected under the draining floor one or more automatic or manual valves (17) to unload the gas produced by the fermentation-a valve (18) provide for loading any gases that we would need to put in the fermenter-an axially positioned rotary distributor (16) supplies all necessary fluids, gas, electrical energy, and oil for power transmission and compressed air to the mechanism-a man passage (8) that allow the access into the machine.
