FIELD: dairy industry, in particular hard cheese production.;SUBSTANCE: claimed method includes granular curd production followed by filler, vegetable oil and table salt addition. As filler mixture of decapsulated cysts of saltwater brine shrimp Artemia Salina (L) in amount of 0.25-1.0 % is used. Then cheese is salted and aged.
