The process involves sorting waste, particularly the leftovers of meals, and sorting of crockery to separate trays (10), glasses (11), covers (12) and plates (13). The waste and the crockery are placed after sorting in two selective carriages to gather them separately. The sorted crockery is cleaned in a wash tunnel (9), and the sorted and cleaned crockery is then arranged. An independent claim is also included for an installation for implementing a process of cleaning and arranging crockery.
