PROBLEM TO BE SOLVED: To provide a curd inhibitor for inhibiting the formation of the curd, an eat feeling-improving agent for meat to make the meat hardly being dry, an yield-improving agent for the meat to improve the yield of the meat, a canned fish meat and processed foods of animal and bird meats improved with the above, and a method for producing them.;SOLUTION: This curd inhibitory, eat feeling-improving and yield improving agent for the meat contains an alkaline agent, a buffering agent and a thickening agent. It is preferable that the alkaline agent is trisodium phosphate, the buffering agent is sodium lactate and the thickening agent is starch. In the canned fish meat, solution containing the curd inhibitor, eat feeling-improving agent for the meat or yield-improving agent for the meat is filled at the inside of the can main body. The processed food of animal and bird meat contains the eat feeling-improving agent for the meat or the yield-improving agent for the meat.;COPYRIGHT: (C)2007,JPO&INPIT
