NOODLE HAVING DEVIL'S TONGUE POWDER AS MAIN RAW MATERIAL

PROBLEM TO BE SOLVED: To provide noodles intended for solving such problems that a method of using devil's tongue powder together with raw material powder in order to produce noodles having springy palate feeling and free from stretching in hot water is suggested, but the conventional noodle making method cannot increase an amount of added water, so addition of 10 pts.wt. of devil's tongue powder to 100 pts.wt. of raw material powder is a limit and satisfactory noodles cannot be obtained.;SOLUTION: A method for producing the noodles comprises adding water to a raw material powder followed by adding devil's tongue powder, and heating the product to ≥60°C followed by extruding in a noodle-like form at room temperature of ≤40°C. By the above process, an amount of water to be added can be increased and 10-45 pts.wt. of devil's tongue powder can be added to 100 pts.wt. of raw material powder.;COPYRIGHT: (C)2008,JPO&INPIT
