Two methods for preparing tofu for use in vegetarian burgers are described, one where the tofu is fried and the second using frozen tofu. The methods produce a chewable, non-frangible tofu suitable as a meat substitute as the base ingredient in the preparation of vegetarian burgers. A method of preparation of vegetarian burgers using prepared tofu is also revealed.
