A polypeptide having .beta.-glucosidase enzymatic activity, a polynucleotideencoding the polypeptide, a nucleic acidconstructs carrying the polynucleotide, transformed or infected cells, such asyeast cells, and transgenic organisms expressing thepolynucleotide and various uses of the polypeptide, the polynucleotide, cellsand/or organisms, including, producing a recombinantpolypeptide having the .beta.-glucosidase enzymatic activity, increasing thelevel of aroma compounds in alcoholic beverages, as well asother fermentation products of plant material hydrolyzing cellobiose and thusincreasing the level of fermentable glucose, increasingthe production of alcohol, such as ethanol from plant material increasing thearoma released from a plant or a plant product, andhydrolysis or transglycosylation of glycosides
