Provided are a preparing herb medicine fried chicken to prevent the absorption of an oil during frying process and to protect moisture by using a herb medicine batter, and the herb medicine fried chicken prepared by the method. The method comprises the steps of mixing Angelicae Dahuricae Radix, Astragali Radix, Angelicae Gigantis Radix, Cnidium officinale and cinnamon powders to prepare a herb medicine batter; cleaning a chicken or the legs of a chicken; treating the cleaned chicken with water and salt in an ultrasonic wave machine; washing the salted one with flowing water and removing water; coating the chicken with the herb medicine batter and marbling it to re-coat it; frying the herb medicine batter-coated chicken at a temperature of 170-185 deg.C for 8-15 min; and cooling it.
