A method for controlling cooking course of unmilled rice with GABA(gamma-amino butyric acid) in an electric pressure rice cooker is provided to prevent bad smell in fermenting and decomposition, and to improve convenience by extracting GABA from unmilled rice according to optimal temperature, concentration of hydrogen ion and process time, and cooking rice. A cooking course for unmilled rice with GABA is selected(S100), and GABA extraction time is selected by a user(S110). The input GABA extraction time is compared with zero(S120), and GABA is extracted from unmilled rice by heating an electric pressure rice cooker at temperature of 40 deg.C(S130). A microprocessor heats the electric pressure rice cooker at temperature of 98 deg.C by operating a heater(S140), and heats the electric pressure rice cooker successively at temperature of 115 deg.C(S150). Cooking is finished by boiling rice at temperature of 125 deg.C(S160), and the boiled unmilled rice is steamed with latent heat at 90 deg.C for 15 minutes(S170). Steam is discharged by using a solenoid valve(S180), and temperature of the electric pressure rice cooker is kept at temperature of 70 deg.C after finishing steaming(S190). GABA is extracted from unmilled rice at temperature of 35 to 45 deg.C.
