The present invention relates to a method for preparing a whey protein concentrate enriched in β-lactoglobulin, comprising providing an acid whey; heating the whey at an acidic pH to a particular temperature; ultrafiltering the heated whey over a membrane with a cut-off ≤ 10 kDalton to obtain a concentrated retentate; microfiltering the retentate over a microfiltration membrane to obtain a permeate; optionally ultrafiltering and/or diafiltering the permeate over a membrane with a cut-off of ≤ 10 kDalton; and retaining the retentate to obtain a β-lactoglobulin enriched whey protein concentrate or isolate. The invention further relates to whey protein concentrates or isolates enriched in β-lactoglobulin and its use in dairy products or enriched in α-lactalbumin and its use.
