The slice thickness regulator, especially for a food product (9) fed by gravity towards a continuous cutting strip (1), incorporates a deformable cylinder (15) that expands under the pressure of a gas or liquid and is connected e.g. to a stress gauge (18) that measures the changing weight of the product as slices (10) are cut from it. The regulator is mounted on an adjustable panel (5) connected by a pivot (11) to a fixed frame (12) with an arm (14) that can be adjusted by a nut (7).
