PROBLEM TO BE SOLVED: To provide a method for drying suizenji-na (Gynura bicolor DC)(another name is kinji-sou) in order to obtain anthocyanin pigment contained in the kinji-sou and to provide a technology for utilizing a pigment extract obtained by hot water extraction of the dried kinji-sou.;SOLUTION: The method for producing a dried kinji-sou is to dry leaves of kinji-sou, that is heated previously by steam for ca 4 minutes, by a convecting hot air for 6-8 hours at 90°C.
