PPROBLEM TO BE SOLVED: To provide a potato food material moderately hydrolyzed with powders of various species of crops and enzyme preparations and having improved flavor and texture and to provide a potato food of good quality using the potato food material. PSOLUTION: (1) The potato food material comprises starch, etc., in a heat-treated potato mash moderately hydrolyzed with various species of crop powders or enzyme preparations and has the improved flavor and texture. (2) The potato food material is obtained by carrying out moderate hydrolysis of the starch, etc., in a potato mash according to addition of the powders of potatoes or grains containing a large amount of amylases or a suspension thereof. (3) The potato food material comprises the potatoes which are sweet potatoes and grains that are wheat or barley. (4) The potato food material is obtained by carrying out the moderate hydrolysis of the starch, etc., in the potato mash with various kinds of amylase preparations. (5) The potato food material is prepared by using the amylase preparations which are β-amylase preparations. (6) The potato food is produced by using the potato food material.
