The Ethiopian mustard seed oil is devoid of erucic acid, that is less than 0.5 percent by weight with regard to the total content of fatty acids of oil. Oleic acid content is between 80-90 percent by weight of total fatty acids. The Ethiopian mustard seed oil is obtained by a biotechnological process as this type of oil is not produced naturally by Ethiopian mustard plants Brassica carinata.
