The method for a Maillard reaction at a surface of a food (1) by an infrared radiator useful in fast food restaurants, comprises introducing an energy supply of 120 kW/m2 on two opposing sides of the food. The energy supply is produced by a carbon radiator with a power density of 220 kW/m2. The carbon radiator and the food are provided with cooling air. The temperature in the inside of the food remains constant.
