PROBLEM TO BE SOLVED: To provide a method for producing soybean, capable of preparing soybean milk and bean curd having good balance of the delicious taste and the sweetness.;SOLUTION: The method for producing modified soybean comprises a storage process for storing the soybean in a state in which average water content of soybean is within a flavor-enhancing region. Since production reaction of a free amino acid in soybean can be advanced by storing average water content of soybean in the flavor-enhancing region, delicious taste of soybean is increased and flavor can be enhanced so that balance of the delicious taste and the sweetness is improved.;COPYRIGHT: (C)2009,JPO&INPIT
