PROBLEM TO BE SOLVED: To provide a mixture of processed soybean obtained by dispersing soybean single cells without having damage in cell walls and cell membranes and keeping protein granules and fat spheres in a healthy state at the inside of the cells, sesame oil and an oil and fats containing a modified saturated fatty acid containing a surfactant and an antioxidant, and a food by using the same.;SOLUTION: As the unsaturated fatty acid in the oils and fats contained in the modified unsaturated fatty acid, at least 1 kind of docosahexaenoic acid (DHA) and icosapentaenoic acid (EPA) is preferable, and also the processed soybean is preferably produced by performing an enzyme-treatment on the soybean by using pectinase produced by microorganisms belonging to the genus Bacillus. Since the mixture does not have a peculiar smell of the soybean and unsaturated fatty acid, a consumer can take the soybean content and unsaturated fatty acid tastefully from various cooked materials obtained by adding the mixture to a desired food material and cooking.;COPYRIGHT: (C)2004,JPO
