PPROBLEM TO BE SOLVED: To provide an apoptosis-inducing substance which contains a carotenoid pigment-containing extract originated from carotenoid-containing potato as an active ingredient, has greatly high safety, is more inexpensive than conventional anticancer agents, does not produce side effects, and can continuously be taken. PSOLUTION: This apoptosis-inducing substance comprises a carotenoid pigment-containing extract extracted from a potato kind which is an ancestral potato kind for ordinary culture potato kinds, such as Solanum tuberosum ssp. tuberosam L. or Solanum phureja Juz. et Buk, a different culture potato kind, or a mated breeding kind based on them, improved in agronomic characters such as pigment concentration, disease resistance, yield or the like, and containing a carotenoid pigment in the flesh portion, has a yellow color tone of raw potato flesh portion in comparison with the Solanum tuberosum ssp. tuberosam L., and contains a carotenoid-based yellow pigment: zeaxanthin which is a main ingredient for forming the color tone of the flesh portion of the potato, in a concentration of 3 g/g and has bSP*/SPof 30 in LSP*/SP, aSP*/SPand bSP*/SPcolor system and measured by a colorimeter, as a main ingredient for forming the color tone of the flesh portion.
