AN IMPROVED PROCESS FOR THE PREMARATIN OF BETACYANIN AND BETAXANTHIN FROM BETALAINS

The present invention relates to a process for the preparation of betacyanin and betaxanthin from betalains, which involves extraction of beet pulp with acidified aqueous phase, filtration and centrifugation to remove the cell debris and phenolic compounds. The obtained supernatant is subjected to aqueous two-phase extraction in two stages. The fractionation of betacyanin and betaxanthin of about 85% is achieved.
