The present invention provides to an economic process for the preparation of stable dry powder of betalains dye from red beet roots by avoiding the use of organic solvents, water or acidulated water. It is obtained by mixing juice of beet roots, directly with 1% to 2.5% of novel adsorbent such as gum acacia and soluble starch.
