A method for automated control of the process for continuous fermentation of white table wines comprises measurement of temperature and mash discharge. The temperature of mash is additionally regulated by means of changing of steam consumption for heating, the high dynamic accuracy of regulation is provided due to the independence of temperature-control loops.
