The invention concerns the production process of a composition based on Kefir yeasts for the use in pharmaceutical, cosmetic and food industry comprising the steps of keeping Kefir micro-orgamisms with no other ingredient under spring water for a seven-day period, keeping said micro-orgamisms under filtered, deionized water for further seven days, fermenting in a specified medium under sterilized environment, separating the yeasts from the bacilli by screening, and preserving the obtained composition by freezing or lyophilisation.
