In a continual process to produce sweets, an aqueous solution with the ingredients is boiled and water evaporated. The residue is placed in a chamber from which the atmosphere is evaporated and the residue cooled. After boiling and prior to evaporation the aqueous solution is passed through a pressure barrier causing separation into a non-boiled fraction and a boiled fraction. The solution is boiled either under pressure or at slightly enhanced pressure. After passing through the pressure barrier the boiled solution discharges steam for a ten or more seconds at reduced pressure. The boiled solution releases steam in a two-stage process. In the first stage the pressure is less than 0.6 bar absolute. In the second stage the pressure is less than 0.15 bar. Also claimed is a commensurate assembly.
