A manufacturing method for making wet-cut noodles added with pre-gelatinized chinese yam powder and dextrinized soybean powder is provided to increase viscosity and to obtain soft texture after cooking. A manufacturing method for making wet-cut noodles added with pre-gelatinized chinese yam powder and dextrinized soybean powder comprises a gelatinization process; a mixing process; a cutting process; and a packing process. The wet-cut noodles removes the smell of the flour when cooking the noodles.
