A method for making Kimchi containing high content of ornithine is provided to enhance function and nutrition of Kimchi using a starter containing a strain which has high productivity of ornithine. A Lactobacillus brevis OPK-3(KFCC 11330) has high productivity of ornithine. A starter for fermenting Kimchi contains high productivity of Lactobacillus brevis OPK-3(KFCC 11330). The starter contains Lactobacillus MRS broth as fermentation substrate. The formulation of starter is powder or liquid. A method for making Kimchi having high content of ornithine is to add and ferment starter for fermenting Kimchi. An arginine is added in the starter.
