PURPOSE: Sprout vegetables with improved antioxidant activity and a growing method thereof are provided to enrich the sprout vegetables with antioxidant or vitamins. CONSTITUTION: A method for growing sprout vegetables comprises the following steps of: putting seeds of sprout vegetables into a cultivator; controlling oxygen content in the cultivator to create an oxidative stress condition; and cultivating the sprout vegetables. The cultivating step comprises a first cultivation step and a second cultivation step. The oxygen contents of the first and second cultivation steps are different from each other. The first cultivation step lasts for 1-3 days with the oxygen content of 0.5-2.5ppm. The second cultivation step lasts for 3-5 days with the oxygen content of 20-40ppm. The cultivator comprises a cultivation port(40), oxygen concentration adjusting unit, and a chamber which is equipped with an air supply port(23), air exhaust port(24), water supply port(27), and water discharge port(28).
