A method for manufacturing dietary fiber made of brewer's grains is provided to increase the content of the dietary fiber with a low cost. A method for manufacturing dietary fiber made of brewer's grains comprises the following steps of: agitating the brewer's grains after adding one or more alkaline solution selected from a group consisting of sodium hydroxide, potassium hydroxide or calcium hydroxide; dipping the brewer's grains after neutralizing the processed brewer's grains; washing a sediment, agitating and mixing the brewer's grains with a Na-phosphate buffer solution; reacting the brewer's grains with enzymes which are one or more of termamyl, amylase, and glucoamylase and one or more of protease, papain, bromelinm, and ficin; filtering and centrifuging a reactant after cooling; and separating dietary fiber from the brewer's grains after drying the dietary fiber at 50~70 °C.
