The method for monitoring a fermenting process in a fermenting container (8), comprises colorimetrically determining a flow rate of the gas escaping from the fermenting container, measuring temperature and the direction of flow of the gas and the level of liquid in a fermenting tube (1), and determining the fermenting progress, residual sugar, carbon dioxide content or the alcohol content by the measured values and/or determined data. The power requirement is determined during the calorimetric determination to compensate cooling or heating of a heating or a cooling element caused by the escaping gas flow such that the temperature difference is determined with respect to the flow rate of the escaping gas. The heating or cooling element is brought to a nominal temperature, which is higher or lower than the temperature of the gas.
