The method for monitoring a fermenting process in a fermenting container (8), comprises colorimetrically determining a flow rate of the gas escaping from the container, measuring temperature and the direction of flow of the gas and the level of liquid in a fermenting tube (1), and determining the fermenting progress, residual sugar, carbon dioxide content or the alcohol content by the measured values and/or determined dates. The power requirement is determined during the calorimetric determination to compensate cooling or heating of a heating or a cooling element caused by the gas flow. The method for monitoring a fermenting process in a fermenting container (8), comprises colorimetrically determining a flow rate of the gas escaping from the fermenting container, measuring temperature and the direction of flow of the gas and the level of liquid in a fermenting tube (1), and determining the fermenting progress, residual sugar, carbon dioxide content or the alcohol content by the measured values and/or determined data. The power requirement is determined during the calorimetric determination to compensate cooling or heating of a heating or a cooling element caused by the escaping gas flow such that the temperature difference is determined with respect to the flow rate of the escaping gas. The heating or cooling element is brought to a nominal temperature, which is higher or lower than the temperature of the gas. An alarm is triggered, if the flow rate of the escaping gas, the level of liquid in the fermenting tube or the direction of flow deviates from a desired value. The obtained measured values and/or data are stored, analyzed, processed and/or tabularly represented or printed. The determined measured values and/or data are transferred by wire and/or radio to an electronic data-processing system and compared with given desired values. In the case of deviation of the desired values, an electrical, acoustic or optical alerting take place, and a full or half-automated regularization of the fermenting procedure take place via heating or cooling of the fermenting products and/or the fermenting container. The measured values and/or data of the fermenting containers are simultaneously or sequentially queried, processed or evaluated. An individual regularization of the fermenting procedure takes place for the individual fermenting containers. The data communication of the individual fermenting containers is made by a bus. An independent claim is included for a device for monitoring a fermenting procedure in a fermenting container.
