The stroke frequency of the cover (8) is electronically measured when the cover is opened and/or closed by a switch attached at the base of the bung. The minimum liquid level in the bung is supervised by dry reed contact. A volume flow between the container and the bung is measured by tension difference between upstream and downstream of a heater-arranged sensor. The quantity of carbon dioxide emerged in the fermentation is measured from the temperature and the volume of the emerged gas and is used for controlling sugar removal and increase of alcohol in the fermentation. The values determined at the bung are processed electronically, stored, printed out, applied graphically and wirelessly transmitted to an evaluation unit and automatically compared with values of external disturbances on the fermentation such as heating or cooling. The minimum liquid quantity is supervised by an automatic alarm such as optical alarm, acoustical alarm, telephone, short message service, electronic mail or other electronic messages.
