PROBLEM TO BE SOLVED: To provide a quality improving material enabling production of Chinese food materials which bring no offensive taste of a calcium component and are excellent in preservability, and to provide a method for producing Chinese food materials using the quality improving material.;SOLUTION: This quality improving material for the Chinese food materials is used by mixing, during Chinese food material production including kneading wheat flour with water, with wheat flour in the kneading.
