PURPOSE: A method for manufacturing a composition enhancing polyphenol compound using fallen apples is provided to reduce economic loss of farmhouse and to prevent coronary artery diseases.;CONSTITUTION: A method for composition which enhances polyphenol compound using fallen apples comprises: a step of treating saccharolytic enzyme to the apples to cleave alpha-1,4 or beta-1,4 bond between cell-cell wall; and a step of converting the polyphenol compound of glycone form to aglycone form to obtain extract, concentrate luquid and powder having a large amount of polyphenol compound.
