FIELD: food industry.;SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for extraction of almond flowers by liquid nitrogen with corresponding miscella separation, preparation of yacon and pomegranate peels, its cutting, drying in microwave field till residual humidity about 20% at microwave field power providing warming raw material till temperature 80-90°C inside the bits during at least an hour. After that yacon is roasted, pomegranate peels are dried till residual humidity about 5% by convective method, yacon and pomegranate peels are mixed in mass ratio 7:3, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost. Then depressurisation is performed till atmosphere pressure with simultaneous freezing of mixture and cryomilled in medium of evolved nitrogen follow.;EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology.
