PPROBLEM TO BE SOLVED: To provide a highly heat-resistant lipase. PSOLUTION: The heat-resistant lipase, which is derived from Aspergillus oryzae, is provided, having a specific amino acid sequence, and having still remaining activity even in case of being heated for a long period of time under elevated temperature circumstances (for 5 min or longer at 90C). A gene encoding the heat-resistant lipase is also provided, and a method for expressing the heat-resistant lipase is also provided.
