Gypsum composition comprises: 100 wt.% of gypsum as a dry substance; and 0.001-0.5 wt.% of hardening retarder, relative to dry substance, where the hardening retarder is at least a simple adduct retardant and/or condensate produced by the reaction of (a) at least one protein hydrolysate, a pure amino acid, amino acid mixtures and/or their hydrochlorides with (b) at least one mono-, di-, oligo- and/or poly-carboxylic acid that is not derived from an amino acid and/or derived from carboxylic acid derivatives. Gypsum composition comprises: 100 wt.% of gypsum as a dry substance; and 0.001-0.5 wt.% of hardening retarder, relative to dry substance, where: the hardening retarder is at least a simple adduct retardant and/or condensate produced by the reaction of (a) at least one protein hydrolysate, a pure amino acid, amino acid mixtures and/or their hydrochlorides with (b) at least one mono-, di-, oligo- and/or poly-carboxylic acid that is not derived from an amino acid and/or derived from carboxylic acid derivatives; and the carboxylic acid derivative is carboxylic acid anhydrides, carboxylic acid halides and/or carboxylic acid active esters. An independent claim is included for producing the composition comprising adding the hardening retarder before, during and/or after mixing the gypsum.
