The present invention comprises stable compositions of Hibiscus calyces, which includes polymeric matrixes, as well as simple and efficient methods for obtaining the same. The described compositions contain a high concentration (more than 95% by weight) of the original anthocyanins detected in the calyces of the plant, which allows the same to be used as sweetener compositions and as raw material for obtaining drugs.
