A method to prepare a poultry carcass for selling at agro-industrial markets which includes preslaughter keeping of poultry, separating extremities thereof, a puncture and a circular cut around the cloaca, a cut of the abdominal cavity wall from the circular cut in the direction of the keel, separating the cloaca and internal organs, separating a ventricle. The longitudinal cut of the abdominal cavity wall from the circular cut in the direction of the keel is made for a length of 3-4 cm. The intestines are removed together with the cloaca, and the duodenum is separated from the stomach not allowing a rupture of the intestines.
