The invention relates to a method for preparing an oat product enriched in thecontent of .beta.-glucan as well as amethod for preparing a foodstuff incorporating such an enriched oat preparate.The invention uses dehulled or naked oats, which aresubjected to dry milling and dry fractionation at multiple stages without apreceding removal of fat. The oat material is at a first stagesubjected to dry milling and dry classification to separate a coarser fractioncontaining grain cell wall material and starch containingsubaleurone layer as a pre-enriched fraction from a finer, endospermcontaining fraction. At a second stage said pre-enriched fractionis subjected to dry milling, where the disintegrating action is more effectivethan at the first stage, and to dry classification forseparating a coarser, cell wall material containing fraction as the enrichedproduct from a finer, starch containing fraction. The drymilling may be constituted by roller or impact milling, and the dryclassification may be sieving or air classification. The foodstuffcontaining the enriched oat preparate may be a cereal, meat, ready-to-eatmeal, drink or candy product.
